Squee / Lapland University of Applied Sciences

Squee is a food technology initiative focused on developing high-protein meal concepts and alternative protein solutions for the food industry. It is presented as a "second wave" alternative protein project, aiming to address the shortcomings of earlier plant-based products by improving taste, texture, nutrition, and sustainability at the same time. The project is run by the Natural Resources Institute Finland (Luke) and funded by Business Finland. Squee says it is looking for partners and investors to further test and develop its technology, and it positions itself as a bridge between research and commercial food concepts. Core Values Taste and enjoyment : Squee emphasizes pleasant umami aroma, good mouthfeel, and distinctive flavor as central to making alternative protein appealing. Nutrition and health : The company highlights high protein, high fiber, vitamin D, and beta-glucan content as part of its food proposition. Sustainability : Squee focuses on upcycling brewery sidestreams, reducing waste, and lowering environmental impact through resource-efficient production. Innovation : The project is built around patented biotechnology and a research-driven approach to creating new food concepts. Unique Aspects Research-to-business origin : Squee is a project of Natural Resources Institute Finland, giving it a strong research foundation rather than a purely startup-origin story. Patented brewery-side-stream technology : Its Bo’real technology uses food-grade brewery sidestreams as feedstock for biofermentation, which is a distinctive circular-economy approach. Gourmet fungal strain : The platform uses a fungal strain called Saimaa, which Squee says helps create a unique mushroom-like aroma and texture without a mouldy aftertaste. Partner and investor focus : Squee explicitly states that it is seeking partners and investors to advance the technology, indicating an open collaboration model.
