FabaFood (project)

Five parties started the FabaFood project. The aim is to develop modern field bean varieties that are suitable for food use. Keygene, Agrifirm, Herba Ingredients, Me-at and Upfield are working together for this. Although the field bean is suitable for cultivation in the Netherlands, the current varieties have been selected for use as animal feed. The beans of these varieties therefore require a lot of processing to improve the quality, taste, color and texture to a level that makes the protein attractive for human consumption. The need for all these operations is a serious limitation for the development of the Faba bean area for human consumption. The intended outcome of the project is therefore new varieties, new protein extraction methods and prototypes of meat and dairy substitutes that are superior in taste, color, texture and price.
