PrinsenZwam cultivates sustainably grown oyster mushrooms using freshly collected coffee grounds as a substrate, promoting positive business practices and corporate social responsibility in the city of Breda. By repurposing discarded coffee grounds, which would typically end up as waste, they initiate a circular food process. The cultivation involves processing the coffee grounds with mushroom spawn, leading to mycelium development and eventually fruiting phase where oyster mushrooms grow. Post-harvest, the spent substrate is converted into vermicast, a nutritious organic fertilizer that contributes to the growth of new plants, thus closing the biological cycle. PrinsenZwam aims to foster a circular economy, balancing social, economic, and ecological responsibilities through local collaborations while providing delicious oyster mushrooms, known for their firm texture and versatility as a meat substitute in various dishes.
