About Mungboon project (project)
The main current protein alternatives, from soy and pea, have disadvantages including transport, allergy and taste. Mung bean has been explored as a potential alternative that does not suffer from some of these disadvantages. The only downside is that mung beans are currently sourced from Asia. Within this project we have committed ourselves to the cultivation and valorization of mung beans in the Netherlands.
